A Christmas favorite...
Rum Cake
1 Cup chopped nuts 1/2 Cup vegetable oil
1 Package yellow cake mix 1 Cup rum, divided
1 (3.5 ounce) Package instant vanilla pudding mix 1 Cup sugar
4 eggs 1/2 Cup butter
1/2 Cup cold water 1/4 Cup water
Directions:
Preheat oven to 325 Degrees F. Grease a tube pan.
Sprinkle nuts in the bottom of the tube pan.
Combine the cake mix, pudding mix, eggs, cold water, oil and half of the rum in a large bowl. Mix for 2 minutes. Pour over nuts. Bake for 60 minutes. Allow to cool.
Meanwhile, combine sugar, butter and second addition of water in a saucepan. Boil for 5 Minutes, stirring constantly; remove from the heat. Stir in remaining half of the rum then return to heat just until mixture boils. Prick the cake all over the top and pour on the glaze.
