Zucchini Bread Recipe:

This is another great recipe that I have been using for years...

                                             Zucchini Bread 

3 eggs                                              2 Cups sugar
1 teaspoon vanilla                             3 Cups flour
1 teaspoon baking soda                     1/2 teaspoon baking powder
1 1/2 teaspoons cinnamon                 1/2 Cup chopped nuts (walnuts or pecans)
1/2 teaspoon nutmeg                        1 teaspoon salt
3/4 Cup Canola oil                             3 Cups grated zucchini   



Directions:
Preheat oven to 350 degrees F.   Coat two 8x4x2-inch loaf pans with non-stick cooking spray.

Blend sugar and oil in mixing bowl, add eggs and beat well. Add in baking soda, cinnamon, nutmeg, salt , baking powder and vanilla, and mix well. Add flour and mix until blended in. Stir in Zucchini and nuts. Pour mixture into the prepared loaf pans and bake 55 to 60 minutes or until a wooden toothpick inserted near center comes out clean.
Cool in the pans on a wire rack for 10 minutes. Remove from the pans and cool completely on the wire rack.
