This is another really easy and REALLY good soup recipe:
Tortellini Soup
2 Tablespoons butter Salt and pepper to taste
1 1/2 Tablespoons chopped garlic 27 ounce can stewed tomatoes
3 2/3 Cups chicken broth 1 bunch of spinach
1 1/4 pounds tortellini 6 fresh basil leaves
2/3 Cups grated Parmesan Cheese
Directions:
Saute garlic in butter for 2 minutes. Stir in broth and tortellini, bring to a boil. reduce heat, mix in Parmesan Cheese ans season with salt and pepper. Simmer until tortellini is tender, about 5 minutes, Stir in tomatoes, spinach and basil. Simmer 2 minutes. Garnish with grated Parmesan Cheese.
*Serving suggestion: A crusty loaf of Italian bread and a nice bottle of (Red) Zinfandel
