An oldy but a goody... great for a Potluck.
Mississippi Mud Cake
2 Cups sugar 1 1/2 Cups flour
2 Cubes butter 1 Cup chopped nuts (walnuts or pecans)
4 eggs 1 1/2 Cups shredded coconut
1/4 Cup Baking cocoa 1 (13 oz) Jar Marshmallow Creme
1 teaspoonful vanilla
Directions:
Preheat oven to 350 degrees F. Grease and flour a 9x13 pan.
Cream sugar and butter. Add cocoa, then eggs and vanilla. Add flour and beat 2 minutes. Fold in coconut and chopped nuts. Pour into pan and bake for 30 to 35 minutes. Cool 10 minutes, then spread with Marshmallow Creme.Cool completely and the top with Icing (recipe follows).
Icing
1 Stick butter 1 (16oz) Box powdered sugar
1/2 Cup cocoa 1 teaspoonful vanilla extract
1/2 Cup evaporated (canned) milk
Directions:
Melt butter in a small pan. Add baking cocoa and milk. Bring to a boil, stirring so that it doesn't scorch. Measure powdered sugar into a medium bowl and pour chocolate mixture over it. Add vanilla. Beat until smooth and spread over cake.
