Homemade Granola Recipe

I came across an interesting Granola recipe and I really worked with it to get it to be just the way that I like it. Anyone who has tried this has said that it's much better than any of the store bought (it's not as hard as the store bought kinds tend to be). I love this on the Activia Light Vanilla Yogurt...add a layer of sliced fresh strawberries and we're talking perfection.

                                                Homemade Granola Recipe
                                        
                                         4 Cups of old-fashioned rolled oats
                                         2 Cups sweetened shredded coconut
                                         1 Cup sliced almonds
                                         1 Cup chopped walnuts
                                         1 Cup chopped dried apricots
                                         1 Cup dried blueberries
                                         1/2 Cup canola oil
                                         1/3 Cup good honey
                                         2 teaspoons ground cinnamon
                                         1/4 Cup brown sugar

Directions:
Preheat the oven to 350 degrees F

Toss the oats, coconut, and nuts together in a large bowl. Pour the canola oil and honey over the oat mixture.
Add the cinnamon and the brown sugar, and stir with a wooden spoon until all of the oats and nuts are coated with the liquids. Pour onto a sheet pan (I spray the pan first with a non-stick canola oil baking spray). Bake stirring occasionally with a spatula, until the mixture turns a nice even golden brown, about 25 to 30 minutes.
Remove the granola from the oven and allow to cool, stirring occasionally. Once cool return to the bowl and toss in the chopped dried apricots and dried blueberries. Store the cooked granola in an airtight container (Zip Lock bags work well)... Enjoy!
