Gruyere Scalloped Potatoes:

A really nice side dish...

                                     Gruyere Scalloped Potatoes

1 medium onion, chopped                     1/8 teaspoon pepper
1 Tablespoon butter                              1 1/4  Cups milk
4 teaspoons flour                                  3 Medium potatoes, peeled and thinly sliced
1/2 teaspoon salt                                  3/4 Cup Gruyere cheese
1/4  teaspoon nutmeg

Directions:
Preheat oven to 350 Degrees F.
Spray a 1 quart Casserole Dish with Non-stick cooking spray.

For sauce: In a medium pan cook onion in hot butter until tender. Stir in flour, salt, nutmeg and pepper. Add milk all at once. Cook and stir until thickened and bubbly. Remove from heat.
Place half of sliced potatoes in the prepared Casserole Dish. Sprinkle with 1/2 cup of cheese. Pour half of the sauce over potatoes and cheese. Top with remaining potatoes and sauce.
Bake, covered for 35 minutes. Uncover and bake 30 to 35 minutes more, or until potatoes are golden and tender. Sprinkle with remaining cheese. Bake for 5 minutes more. Let stand 10 minutes.
*May use Cheddar or a Swiss cheese if preferred, and these are really good when you add some diced ham (just put it over the first layer of potatoes before sprinkling on the cheese).
