Apricot Coconut No-Bake Cookies:

I thought I'd throw a Vegan recipe in there for my daughter Amanda's friends:

                                        Apricot Coconut No-Bake Cookies

2 Cups sugar                                        3 Cups Oatmeal
1/2 Cup Non-dairy milk                         2/3 Cup chopped dried apricots
1/4 Cup Earth Balance Margarine           1/2 Cup unsweetened flaked coconut
2 teaspoonfuls vanilla extract

Directions:
Grease a large cookie sheet very lightly.

In  a medium size heavy saucepan, combine sugar, margarine, vanilla extract, and non-dairy milk. Over medium heat while stirring often, bring mixture to a boil. Once boiling, set a timer for one minute and continue cooking over medium heat while stirring.
When timer sounds, remove mixture form heat, and stir in chopped apricots, coconut and oatmeal.
Drop by heaping Tablespoonfuls onto cookie sheet. While they are still warm you may guide them into more of a circle shape, if you desire.
Let cool at room temperature. They will harden nicely, even though they are a gooey mess at first. Patience is the key with these cookies.
