New England Clam Chowder Recipe:

A nice and easy Clam Chowder recipe...

                                              Clam Chowder

4 Slices bacon                                                 3 Tablespoons butter                       
1 Large onion                                                  2 Cans minced clams
3 Cups potatoes                                              1 1/2 Cups half & half
3 Cups water (use broth of clams and               2 teaspoons pepper and salt to taste
enough water to make 3 cups)                         a dash of thyme
chopped parsley (optional)

Directions:
In large frying pan, cook bacon, add onion and cook until soft. Add potatoes and water. Cover and cook until tender. Melt butter in a large saucepan, blend in flour and gradually add half & half. Stir until thick and smooth.
To the White Sauce add potatoes, including water. Add clams, salt, pepper, thyme. Heat but do not boil. Garnish with chopped parsley if desired and serve.
